Alain Ducasse tells a personal and radical story, continuing the work he began twenty-five years ago. He represents the naturalness cuisine, inspired by the fish-vegetables-cereals trilogy, with the help of his chef of Romain Meder. Healthier and more natural, more respectful of the Planet, it delivers a free and nearly instinctive interpretation of Haute Cuisine, revealing the produces’ original flavour, from the noble to the humble, all exceptional.

Turning his back on traditional presentation, wines are now classified by generation. 10 years, 15 years, all the way up to 55 years! A beautiful way to chose wine, defined by an event that marks a life and their celebration. Gérard Margeon, Executive Head Sommelier of Alain Ducasse’s restaurants and Laurent Roucayrol, the restaurant’s head sommelier, ensure wine selection.

Le Bar du Plaza Athénée

Over the last 13 years, Le Bar at the Plaza Athénée has become the place to meet in the capital – a coup largely due to Thierry Hernandez, who became manager of the bar in 2001, shortly after the Patrick Jouin’s first makeover. Inspired by the striking contemporary decor, the manager set about rethinking the cocktail menu in order to add even more surprise and innovation, while remaining in tune with the ambience of a bar much loved by Parisian high society.

Patrick Jouin and Sanjit Manku have adopted a bold and creative approach to Le Bar, plunging guests into a distinctive and dreamlike atmosphere.

The ceiling is hidden under an installation composed of wreaths of fabric whilst the oversized bar in transparent resin levitates within the space. As time passes, the contrast between the floor, the walls and ceiling fades away in an ingenious play of light. Patrick Jouin and Sanjit Manku have created a world in which time seems to stand still. A far cry from the conventional design of a hotel bar, the new Le Bar at the Plaza Athénée invents a whole new language and promises an unprecedented experience.

In harmony with the spirit of his new bar, Thierry Hernandez injected fresh energy into the menu, concocting new textures, rethinking both the overall look and the service, in order to remain true to his philosophy of “maintaining a special relationship with clients.”

Ordering has become even more interactive. The menu can be called up with a flash code, so that the client may read it immediately on their smartphone or telephone and then order their drink.

The Plaza Hotel in New York City is jointly owned by Sahara Group and Kingdom Holdings, a Saudia Arabia based corporation. It has been managed by Fairmont Hotels & Resorts since 1999 and is one of the most coveted NY hotels.

“Nothing unimportant ever happens at The Plaza.” One of America’s most celebrated hotels, The Plaza opened its doors on October 1, 1907, amid a flurry of impressive reports describing it as the greatest hotel in the world. Located at Fifth Avenue and Central Park South, this luxury hotel was constructed in the most fashionable residential section of New York City.

The Plaza was the dream of financier Bernhard Beinecke, hotelier Fred Sterry, and Harry S. Black, President of the Fuller Construction Company. They purchased a 15-year-old hotel of the same name on the site. The three men set out to replace it with what is surely one of the most elegant hotels in the world. Construction of the 19-story building (a skyscraper back then) took two years at a cost of $12 million – an unprecedented sum in those days.

Henry Janeway Hardenbergh, who also designed the Dakota apartments, the Willard Hotel in Washington, D.C. and The Fairmont Copley Plaza Boston, set about his task to provide all the pomp, glory, and opulence of a French chateau. No cost was spared. The largest single order in history for gold-encrusted china was placed with L. Straus & Sons, and no less than 1,650 crystal chandeliers were purchased.

Originally, The Plaza served as a residence for wealthy New Yorkers. Mr. and Mrs. Alfred Gwynne Vanderbilt were the first to sign the register. For guests who chose to rent on a nightly basis at the time, this New York City luxury hotel’s single rooms started at $2.50 per night. Kings, presidents, ambassadors, stars of stage, screen and sports, as well as business executives and travellers from all parts of the world have gathered and stayed at The Plaza. The Plaza was so well known that Ernest Hemingway once advised F. Scott Fitzgerald to give his liver to Princeton and his heart to The Plaza.

Although The Plaza appeared fleetingly in earlier films, this Manhattan luxury hotel’s true movie debut was in Alfred Hitchcock’s 1959 classic North by Northwest – the first time a crew, director and cast assembled on site to make a picture. Before then, movies were shot almost entirely on Hollywood soundstages and rarely on location. The Plaza has provided the location for other motion pictures such as Plaza Suite, The Way We Were, The Great Gatsby, Barefoot in the Park, Funny Girl, Cotton Club, Crocodile Dundee I and II and Home Alone II: Lost In New-York.

“In this suite, the lines between reality and fantasy are blurred. It is an environment that evokes the history of the Fitzgerald’s at The Plaza. It will be a dramatic deco space that recalls the dynamism of the Jazz Age and the 1920s, hopefully making you feel as if you are a guest in a hotel described in one of Fitzgerald’s novels. F. Scott and Zelda Fitzgerald were both regular patrons of The Plaza. The association was so well-known, it is said that Ernest Hemingway once advised F. Scott to give his liver to Princeton and his heart to The Plaza. Planned inclusions in the suite include photos of the author and his wife, his complete works, documentaries and movies that have been made about either him or his work, and beautiful coffee-table books that evoke languorous summers on Long Island’s Gold Coast and the fabulous New York of the Roaring Twenties. We will also include artifacts from our upcoming film as accessories to add a level of authenticity and texture to the room. For example, we will feature Tom Buchanan’s sporting trophies in some of the vitrines that are being built into the walls.

But it has also seriously upped the ante in a rather complacent marketplace, starting with its prime location next to the Kuala Lumpur Convention Centre—close enough to the Petronas Twin Towers for guests to be able walk there even in KL’s swelter.

“My work is based on life.” This is the way Matali Crasset defines what she does. This may be the reason why the 2013’s hospitality project Dar Hi Nefta is so connected to the nature and the local life.

Dar HI, a new concept of eco-retreat, is the magical result of a collaboration between the ever so talented French designer Matali Crasset, Patrick Elouarghi and Philippe Chapelet. “This project follows the terrain’s movement and shapes”, she says. The incredible citadel that supports an hotel and a spa, emerges from the sand as a mirage.

What the designer wanted to do, was precisely what she did: she achieved complete harmony between the natural envolvence and the local life. This explains why all the furniture was precisely manufactured in Tunisia (most of them by a local Nefta’s craftmen). The interiors are happy, peaceful and filled with vibrant colors. Regal purples and hopeful greens, ochre and sand are the exotic colors leading the eye through the space.

Three Different Areas

Matali Crasset designed 3 different areas: the pill houses, the troglodytes and the dunes. “I have conceived an architecture that is toward the indoor when outside and the outdoor when you’re inside” explains Matali. The pill houses in particular (since they are Matali’s favourite part of the project) are elevated from the ground, offering different panoramas: the rove, the village of Nefta or the Chott-El-Jerid, a magic endorheic salt lake.

The Pill Houses

These elevated houses are located according to the sun exposure and seem to be planted into the sand. “Both are very different”, says Matali referring to the Pill houses. The designer believes that one of the houses is more intimate, once it’s high above the ground.

In order to contrast with this intimacy, there’s a small village square down bellow where everyone has a space protected from the sun. The square, the bar, the water point and the small fountains are places to socialize and interact.

When asked what she loves the most about this project, Matali answers “the view”. And she adds: “There is something about Nefta that no picture can represent, perhaps what we call genius loci”.

The French designer confesses that apart from designing objects, they are “neither the center, nor the end (purpose) of the process of creation”: they are just a possible updating among other things (like architecture, scenography, exhibitions) in a certain moment, of a vaster thought system.

Created by world famous designer Karim Rashid, Nhow hotel celebrates Berlin’s modern zeitgeist and connects it to the rest of the world by creating a technorganic land of data-driven art and spaces.

The Mercure Hotel Baumanskaya is located near the centre of Moscow. Its conversion called for an interior design concept that would provide business people with optimal accommodation by international standards while also featuring well-balanced local colour.

This was achieved by designing a monochrome colour concept for the walls and furniture that enters into a dialogue with the linearly coloured carpet. In addition, a so-called brand wall stages the Mercure brand, with wall designs from the Moscow underground or Russian Baroque providing individual highlights.
